Artists provide with us unique ways to experience the world. It might be the perspective in a painting or the sound from a musical instrument. Somehow, they capture the essence of their subject. The vinegars of Lindera Farms have a similar power.
Vinegar is a pretty simple process: Sugar is fermented into alcohol (wine), and the alcohol is fermented into acetic acid (vinegar). Occasionally, the vinegar is infused with an added flavor.
Dan Liberson wanted to make vinegars with unique subtle flavors without short cuts like infusing. That was the only way for his vinegars to capture the essence of the original ingredient. He made wines from a seemingly endless list of fruits and vegetables. Honey too. He then fermented each into these extraordinary vinegars.
These vinegars will change forever how you experience those ingredients and any recipe that uses vinegar. Lindera Farms practices “non interventionist” farming - basically organized foraging. No chemicals, no weeding, nothing but planting the seed and watching it grow. Dan thinks of this as Darwinian farming, because the plants that survive are stronger and make for better vinegar.
