Cuisines bump up against each other all the time and influence each other. Sometimes the results are wonderful and sometimes not. What is the secret ingredient that makes all the difference?
The really great stuff always seems an obvious development that occurs without effort and almost always from the efforts of a single person.
Take “Fusion” cooking. This is not a new “thing.” Cuisines have morphed for thousands of years as new ingredients and techniques and flavors came available to chefs. In the hands of gifted cooks, this is an exciting process with wonderful results. It the hands of the not so gifted, the results are meh at best.
Chef Chitra Agrawal, founder of Brooklyn Delhi, is one of those artistic types. Talking to her, it is clear that her creations are expressions of her talent and understanding of Indian and American cuisines. These are tastes she grew up with, combined to create something new.
Born and raised in New Jersey, she is the child of immigrants from India. Her mother hails from Bangor in the South of India where the cuisine is vegetarian and hot. Her dad from Delhi in the North where the food is closer to what we Americans normally see in Indian restaurants. Both of her parents loved to cook.
Slowly, over time, some elements of the cuisines of Northern and Southern India and America seemed to complement each other in Chitra’s mind. If fusing requires energy to force combinations that are not natural, her process was not fusing! There was no need To force a result. Chef Agrawal had the talent and the tenacity to interpret basic Indian flavors for American tastes without surrendering authenticity. Artists make hard things look easy. It is not.
