A Viennese baker wanted to make a simple loaf that would be ideal as both table bread and sandwiches. Italian bread was too dry and French bread was oddly shaped. His solution was a loaf shaped like an Italian bread from a recipe just rich enough to achieve a soft, resilient, almost silky texture silky and the crust a smooth light brown color.
The bakers at Breads Unlimited make a classic version of Vienna bread. (Steve’s dad was a baker in Vienna before emigrating to the USA.) Use it for sandwiches that do not dry out. Make your own garlic bread. Perfect for bruschetta or spaghetti night. This 16 oz. loaf makes 6 to 8 sandwiches.
